I don’t know about you all but I certainly had my fair share of chocolate over Easter! So over the weekend, J and I made an effort to make some fresh salads just so we could rid the guilt. These two salads are so simple but they are absolutely delicious.

This first creation is inspired by a dish at our favourite tapas haunt, Duende. All you need is boiled beetroots (I guess you can use the tinned variety but they lack the creaminess of freshly boiled beets). Let them cool then slice them any which way you please. Add them to a big bowl of crisp roquette and baby spinach, lentils and goats cheese. I then drizzled olive oil and some lemon and added a dash of Maldon sea salt and freshly ground pepper.

The other salad is a variation on one that my mum has made for many years. I sliced up some ripe, crisp pears, doused them in olive oil and balsamic vinegar and mixed them with thick chunks of fresh garlic. Let the flavours mingle and then add a good handful of roquette and/or baby english spinach and some thin slices of prosciutto. Add a little more olive oil and balsamic to coat the greenery and voila!
